Stevia Sweetened Banana Nut Bread

Do you know that the leaves of the stevia plant have up to 45 times the sweetness of sugar? Now that’s the kind of herb we can really snuggle up to. Combined with a touch of honey, and the natural sweetness of banana, this loaf is all treat without a speck of sugar.

Makes 1 loaf

DAIRY FREE

3 ripe bananas, mashed

2 eggs

2 tbsp agave or honey

1½ tsp stevia powder

2 cups whole spelt flour (or other whole grain flour)

½ cup chopped nuts, such as walnuts, pecans, or almonds

1 tsp salt

1 tsp baking soda

Preheat oven to 350°.

In a medium bowl, combine the banana, eggs, agave or honey and stevia powder. Mix well. In a separate bowl, combine the remaining ingredients. Prepare a loaf pan by oiling and dusting with flour. Fold the wet ingredients into the dry and combine just until all the flour disappears. Pour into the pan and bake for 30–40 minutes, until a toothpick comes out of the center clean. Allow to cool for 5 minutes before removing from the pan.
